Tasting notes
- nose

- Stone fruit and saddle leather over bright wheat grain, with smoky, salty sea-spray notes and a savory grilled-sausage edge
- finish
- Gentle warmth turning sweeter with caramel, walnut and chocolate, while salt air and restrained peat smoke linger to the end
Mash bill
- Organic soft white wheat100%
100% organic soft white wheat. The base is Battle Point, distilled from a heritage soft white wheat grown organically by small Washington farms and fermented with Irish and Scottish whiskey yeasts. The smoke in this bottle comes from the Islay casks, not from the grain, which is unpeated wheat.
- Cask
- New charred American white oak, No. 3 char
- Finish
- 6–12 months in ex-Islay Scotch whisky casks
Why it's craft
Here the distillery puts its all-wheat Battle Point whiskey into casks that held peated Islay Scotch, so a soft American wheat spirit takes on smoke and brine it would never get from new oak alone, and bottles it without chill filtration. Every step from milling the organic Washington wheat to bottling happens at Bainbridge Organic Distillers, an independent family business Keith Barnes started on Bainbridge Island in 2009.
