“100% roasted Hopi blue corn; first Texas whisky post-Prohibition”
Tasting notes
- nose
- roasted corn, caramel, light oak smoke, nutty edge — heirloom blue corn before the barrel
- palate
- viscous and grain-forward; brown sugar and toasted maize with soft roasted-cereal bitterness; corn-sweet mid over heavy oak polish
- finish
- medium warm corn and caramel with hint of smoke and nutty oak
Mash bill
- Roasted Hopi blue corn100%
100% roasted Hopi blue corn — a heirloom southwestern dent corn with more protein and a sweeter, nuttier profile than commodity yellow corn. No rye, no wheat, no barley filler: the entire mash is blue corn so the roasted-grain character stays front and center instead of being diluted into a conventional bourbon bill.
- Cask
- Used oak (historically small ~5-gal, typically uncharred per corn whisky regs)
- Finish
- No secondary finish; used-oak maturation to highlight corn
- Best served
- neat or rocks
Awards
- Double Gold — San Francisco World Spirits Competition
- Master Medal — 2016 Global Spirits Masters (Other Grain)
Why it's craft
Foundational Texas craft release: 100% blue corn, pot still, used oak — a category oddball that still defines Balcones.
