Tasting notes
- nose
- Mint and dried orange segments over white pepper, wildflower honey, vanilla cream, toffee and clove
- palate
- Orchard fruit and peppery rye spice build steadily, with honey and a faint wisp of smoke below
- finish
- Long and warming, the spice tapers off slowly and leaves leather and dry hay behind
Mash bill
- Rye92%
- Smoked malt5%
- Malted barley3%
92% rye, 5% smoked malt, 3% malted barley. The rye comes from a single Illinois farm, and the distillery does not grow its own grain. The small portion of smoked malt adds a faint smoky thread under the rye spice.
- Cask
- New charred white oak, 53-gallon, staves air-dried 18–24 months
- Best served
- neat or in a Sazerac
Why it's craft
The recipe is 92% single-farm Illinois rye with a little smoked malt. Blaum Bros. mills, mashes, ferments, distills and ages it itself on the same Galena site the brothers opened in 2013, and bottles it at 100 proof. The company remains co-owned by its two founders.
