“A bottled-in-bond wheat whiskey built mostly on winter wheat grown in the distillery's own fields.”
Tasting notes
- nose
- gently toasted wheat and plain fresh donuts, building into baking spice, soft caramel and a thin vanilla glaze
- palate
- mellow caramel and light vanilla with measured sweetness, then maple syrup over warm pancakes, staying warm without turning cloying
- finish
- long and building; toasted oak grows while vanilla stays put, then a light cereal note emerges and deepens as it fades
Mash bill
- Winter wheat51%
- Corn23%
- Rye15%
- Malted barley11%
51% winter wheat, 23% corn, 15% rye, 11% malted barley. The winter wheat is grown on the Iron Fish farm, the corn and malted barley come from northern Michigan farms, and the rye from the Upper Peninsula. A wheat-led mash gives a softer, bread-and-pastry character, with the rye adding a little spice.
- Cask
- New charred American oak

Why it's craft
Just over half of this mash is winter wheat planted and harvested on the Iron Fish farm, and the whiskey is distilled, aged and bottled a short walk from that field. It is held to the federal bond rules, one season, one distillery, at least four years and 100 proof, and bottled without chill filtration. Iron Fish has run as a working farm and distillery outside Thompsonville since 2016, and the Mad Angler line is the whiskey it makes itself.
