64% heirloom red corn, 14% heirloom Glacier winter wheat, 14% heirloom Spooner rye, 8% malted barley. The corn, wheat and rye are all grown on the Henry family farm in Dane, and the red corn is a University of Wisconsin variety from 1939 that Joe Henry's father grew and the family brought back into cultivation. Most bourbons use either wheat or rye as the flavor grain; this one uses both in equal parts.

Why it's craft

The corn, wheat and rye in this bourbon come from fields the Henry family has farmed since 1946, including a red corn variety the family brought back into cultivation. Each batch is only about 20 barrels, aged 4 to 6 years in an unheated barn on the farm and then brought down to bottling strength slowly. The spirit is distilled to the family's recipe under contract by 45th Parallel, another Wisconsin distillery, and the family has been laying down barrels since 2009.
