“A four-grain Vermont bourbon in which heirloom corn shares the mash with wheat and oats.”
Tasting notes
- nose
- soft honey and butterscotch over toasted oak, with clove, nutmeg, a strip of citrus peel and a cereal backbone
- palate
- mellow and round; caramel cola and buttered toast meet hazelnut, spiced apple and a building crack of black pepper, with light herbal smoke
- finish
- short to medium; black pepper lingers, then slowly gives way to honey, faint cocoa and a last wisp of smoke
Mash bill
Full grain split not published.
Corn, wheat, oats and malted barley, with corn at about 70% and the split of the other three grains not published. The corn is a non-GMO heirloom variety grown in Vermont's Champlain Valley, and the other grains come from the region. Wheat softens and sweetens the bourbon, while the oats give it a rounder, creamier texture.

Why it's craft
Mad River Distillers is an independent farm distillery in Vermont's Mad River Valley that distills, ages and bottles its own spirits. Its bourbon is built on heirloom Champlain Valley corn and carries both wheat and oats, where most bourbon uses commodity corn with rye or wheat alone. Every bottle is hand-signed and batch-numbered.
