“A stout-inspired bourbon in which oats and roasted chocolate malt take the place of rye, landing on dry cocoa rather than sweetness.”
Tasting notes
- nose
- oak-forward and warm, with dark cocoa, fresh-brewed coffee and dark maple syrup over an oatmeal-cookie base, plus dry cocoa powder and a grainy spice
- palate
- dry with a sweet core; fudge, coffee grounds and salted caramel meet white pepper and spiced hot chocolate, with oak keeping the cocoa in check
- finish
- long; oaty spice, roasted nuts and caramel linger over layered chocolate, drying to cocoa powder, molasses cookie and a light bitter note of oak char

65% corn, 20% malted oats, 7% pale ale malt, 5% steel-cut raw oats, 3% chocolate malt. The oats and malts come from the chocolate oatmeal stouts the distillers drank in their brewing days, reworked into a bourbon recipe. Roasted chocolate malt gives a dry cocoa character, while the raw and malted oats add a grainy spice unlike the peppery bite of rye. Like the rest of the house whiskeys, it is a sour mash fermented in open tanks.

Why it's craft
Winter Whiskey replaces the usual rye or wheat with a chocolate oatmeal stout grain bill of malted and steel-cut oats, pale ale malt and roasted chocolate malt, a recipe that grew out of the team's brewing background. It is released as Bottled-in-Bond, so every bottle comes from one distilling season at one distillery and spends at least four years in a bonded warehouse. New Riff, distilling in Newport since 2014, bottles it without chill filtration.
