Tasting notes
- nose
- dark chocolate with cherry and a wisp of smoke
- palate
- chocolate and sweet cereal over firm oak, with caramel, clove, cinnamon, powdered ginger and allspice
- finish
- long; chocolate-covered cherry, the cherry growing as a gentle sweetness lingers
Mash bill
- Corn68%
- Wheat16%
- Malted barley16%
68% corn, 16% wheat, 16% malted barley. This is Ragged Branch's wheated recipe, the same grain bill as its bottled-in-bond wheated bourbon, and every grain comes from land the distillery owns or leases and is milled fresh each day. Wheat takes the place of rye, which the distillery says leads to caramel and baking spice rather than peppery bite, here carried at full barrel strength.
- Cask
- New charred oak, #3 and #4 char
- Best served
- neat, or with a splash of water or a single cube
Why it's craft
Cowboy Cut is the Ragged Branch wheated bourbon bottled straight from the barrel, without chill filtering, so each numbered batch lands at its own strength. Ragged Branch grows all of its grain on land it owns or leases, mills and mashes it daily, and distills it on a custom 2,000-gallon copper pot-column still from Vendome, a recipe and process shaped with the late Dave Pickerell. The distillery is privately owned and run by its founding partners.
