“Colorado-grown, Colorado-malted barley with a touch of peat, bottled one barrel at a time.”

Tasting notes

nose
Green apple and toasted sugar over vanilla, with graham cracker, green banana and a little fresh straw
palate
Sarsaparilla and brown sugar lead into buttered toffee, honeyed graham cracker and dried banana, with toasted pecan and a dusting of white pepper
finish
Short; cinnamon and peppercorn with dried banana and a hint of green apple, drying to oak and a faint wisp of smoke as it fades

Mash bill

  • Malted barley100%

100% malted barley, a small share of it peated; the proportion of peated malt is not published. The barley is grown and malted in Alamosa, Colorado, so both the grain and its malting stay in the state. The peated malt is what the distillery calls its Scottish twist, and it shows up as a light smoke on the finish.

Cask
New charred American oak, 53-gallon, #3 char

Why it's craft

Spirit Hound has made this whisky from grain to glass in Lyons, Colorado, since it began distilling in 2012, on a copper pot still that co-founder and master distiller Craig Engelhorn built by hand over more than 500 hours. Every bottle comes from a single barrel with no blending, so each barrel tastes a little different, and a sensory panel rather than a fixed age decides when it is bottled. Whisky filled into barrels before the September 2013 flood, which put the distillery under three feet of water, survived and was later bottled.
