Why it's craft
Timo and Ashby Marshall, who crewed on environmental research ships before turning to distilling, built Spirit Works around milling, mashing, fermenting and distilling organic grain themselves, batch by batch, on a copper Carl pot still. They also make their own neutral spirit instead of buying it in. The American Distilling Institute named Spirit Works its 2020 Distillery of the Year.
