“A corn-free rye of rye and malted barley alone, taken from grain to glass in Sonoma County.”
Tasting notes
- nose
- baked apple, fresh coffee, cedar and leather, with a lift of mint
- palate
- clove and nutmeg over honeycomb, toasted coconut and vanilla, turning dry and grippy
- finish
- warm and rounded; clove and baking spice return, then it dries to a faintly medicinal, astringent edge with brown sugar and vanilla underneath
Mash bill
- Rye70%
- Malted barley30%
70% rye, 30% malted barley. There is no corn or wheat in the mash, so the rye sets the character, which the distillery describes as spicy and bold yet rounded. Spirit Works mills, mashes and ferments the grain itself at its Sebastopol distillery.
- Cask
- New charred American oak, 53 gallon
Why it's craft
Spirit Works mills, mashes, ferments and distills this rye itself in Sebastopol, and the label says so: "Distilled from grain in Sonoma County, California." Husband-and-wife founders Timo and Ashby Marshall built the distillery around doing every step on site. The rye ages at least four years in full-size 53-gallon new American oak barrels and is bottled without chill filtration.
