“Estate-grown wheated bourbon from one farm harvest: caramel corn, orchard fruit and a peppery, berry-tinged close.”

Tasting notes

nose
Vanilla-glazed caramel corn, cinnamon candy and toasted almond, over a grassy, earthy note with tart green apple
palate
Thick and coating, with caramel corn, ripe apple, toasted coconut, milk chocolate and orange oil resting on chewy oak and clove
finish
Long; red berries, cinnamon and red apple give way to peppery spice and oak, fading slowly on sweet corn

Mash bill

  • Corn75%
  • Soft red winter wheat15%
  • Malted barley10%

75% corn, 15% soft red winter wheat, 10% malted barley. The Walter family grows the grain on the farm that surrounds the distillery and mashes it with water drawn from the limestone aquifer beneath it. Wheat stands in for rye as the second grain, so the spice stays low and the sweet corn leads.

Cask
New charred American oak, 53-gallon
Best served
neat, or lengthened with club soda or ginger ale

Awards

  • Double Gold — San Francisco World Spirits Competition 2021

Why it's craft

Whiskey Acres, founded in 2013 on a fifth-generation DeKalb County farm, grows its own grain and mashes, distills, ages and bottles it on the same land; none of its whiskey is bought in. Being bonded, this bottle comes from a single distilling season and spent at least five years in barrel before release. It is the distillery's flagship bourbon and is bottled without chill filtration.
