“A bonded rye from a single farm harvest, butterscotch and pear giving way to slow-building pepper.”
Tasting notes
- nose
- Vanilla and butterscotch up front, with ripe pear, soft baking spice and a bready note underneath
- palate
- Creamy, carrying brown sugar, cinnamon and baking spice, then pear, kiwi, light nuttiness and a faint hint of dill
- finish
- Very long; white pepper and cinnamon linger over an earthy, malty grain note, tapering as the spice softens
Mash bill
- Rye75%
- Corn25%
75% rye, 25% corn. Both grains come from the farm's 2016 harvest, grown by the Walter family on the land around the distillery. The corn's vanilla and butterscotch sweetness softens the rye, and the distillery calls the result a bourbon drinker's rye.
- Cask
- New charred American oak, 53-gallon

Why it's craft
The rye in this bottle was grown, harvested and stored on the same farm where it was distilled and aged, the seed-to-spirit approach Whiskey Acres has followed since its founding in 2013. Every bottle comes from one harvest year, printed on the neck label. Being bonded, it comes from one distilling season and spent at least four years in barrel under federal supervision.
