- palate
- Plush and soft, with caramel, toffee, vanilla and clove, then a white pepper bite and a hint of licorice through the middle
- finish
- Fairly long and warm; the sweet notes carry on before white pepper and light char slowly take over, drying out with oak and a faint graininess

- Wheat25%
75% Bloody Butcher red corn, 25% wheat. Bloody Butcher is an heirloom red dent corn dating to 1840s Virginia that Wood Hat grows on its own land. Hinegardner credits red corn with a spicy, peppery character.
- Cask
- Charred chinquapin white oak, 15 gallon, Missouri-grown and coopered
Why it's craft
Bloody Dapper swaps the blue corn of Rubenesque for Bloody Butcher red corn that the distillery grows itself, carrying the Missouri Bourbon designation for Missouri corn and oak. Wood Hat, founded and still owned by Gary Hinegardner, breeds its own corn lines and runs a wood-fired, carbon-neutral distillery.
