Cathedral Ledge Distillery was opened in North Conway, New Hampshire, in December 2020 by Christopher Burk, a veteran of the finance industry, and his wife. It started with vodka and began distilling bourbon in 2021, in a traditional timber-frame barn where the stills sit behind a glass wall in view of visitors. It is New Hampshire's only USDA-certified organic distillery, buying organic grain from farms in New Hampshire, Maine and upstate New York and mashing with unfiltered water that runs off Mount Washington. Its whiskeys are distilled twice in a pot still, the first run with the grain in, and aged in 53-gallon barrels in its barns; the range covers bourbon, wheated bourbon and rye at straight, bottled-in-bond and barrel strength. A solar array supplies all of its electricity, and it was the first New Hampshire distillery recognized by the Better Bev sustainability program. Burk remains owner and head distiller.
