Kauai Distilling Company spent years developing Hawaiian corn before partnering with mainland distillers to turn island corn into American bourbon. Recent Kapahi runs were distilled with Dry Fly's Matt Beaty in Washington. Kapahi is distilled twice, aged for years in new charred American oak and never blended. In May 2026 the company expanded direct shipping to most states.
