Robert Birnecker and Sonat Birnecker Hart opened KOVAL in 2008 as Chicago’s first distillery since Prohibition, betting on organic Midwestern grains, copper pot stills, and a heart-cut-only philosophy. The house is known for unusual mash bills — millet in bourbon, 100% rye — and single-barrel bottlings that keep grain character in front.
