New Dawn Distilling was founded in 2023 by Dr. Dawn O'Neal, an ecologist and climate practitioner, to pair American whiskey with environmental and equity commitments. It operates as Second Sun Distilling, LLC, and does not run its own stills. It partners with craft distilleries, starting with Alton Distillery on the Bethel, New York estate beside the historic Woodstock grounds, to select age-stated whiskeys made from New York grain. It is open about its mash bills. One percent of proceeds supports climate, regenerative agriculture and clean-water organizations, including Intersectional Environmentalist, Soul Fire Farm and the NAACP Center for Environmental and Climate Justice.

New Dawn has no tasting room of its own. Its first bourbon was distilled, aged and bottled at Alton Distillery in Bethel, New York, which runs its own visitor program.
