On historic Kluge Avenue in Palisade, Peach Street Distillers claims Colorado's first legal bourbon and lives the Western Slope farm story: Olathe sweet corn hauled in locally, open fermentation, and a custom copper pot still that fills only about a third of a barrel per run. Head distiller Davy Lindig's Colorado Straight Bourbon — 60% corn / 20% rye / 20% two-row malt, min. two years, 92 proof, hand-numbered — is the house classic from a tasting room that doubles as community hub with food and music.
