Scott Jampol, a Sausalito resident who had worked in tech and then as a bartender, started Sausalito Liquor Co. in 2021. He brought in master distiller Steve Wright of Thoroughbred Spirits Group and chose to source whiskey rather than open a distillery. The Unsinkable name points at the Liberty ships built in Sausalito during the Second World War. The rye comes from a boutique Kentucky distillery and is finished in Napa port casks. The bourbon is finished in Napa Cabernet casks.
