David Weglarz, a former adventure guide, founded StilL 630 in 2011 in downtown St. Louis, in a former Hardee's restaurant just south of Busch Stadium. The name pairs the St and L of St. Louis with 630, the height in feet of the Gateway Arch. Weglarz double-distills every spirit on a Missouri-built pot still made to his own design, fermenting on the grain and leaving the grain in for the first run. The lineup of rye, bourbon, sorghum whiskey, gin, rum and brandy ages in a range of barrels, and an Experimental Series put out a new spirit every month for five years. The house made Missouri's first bottled-in-bond whiskey, S.S. Sorghum, and as president of the Missouri Craft Distillers Guild, Weglarz led the push for the 2019 law that defines Missouri bourbon.
