Tom's Foolery is owned and run by Tom and Lianne Herbruck, and has been pot distilling in Northeast Ohio since 2008. Tom had distilled as a hobby since buying a Prohibition-era moonshine still in 1991, and the couple took it commercial once people started asking for what he made. The distillery sits on a 115-acre farm in Burton, in Geauga County, where it grows all of its own corn and rye and rotates the fields with beans. Its bourbon and rye are sour mash whiskeys, cooked with backset and water from the farm's artesian well and double distilled in pot stills, the first run on a beer still of more than 1,200 gallons, the largest pot still in Ohio. The whiskey ages in an unheated rackhouse. Its early whiskey ran on the historic pot stills and mash tun from the closed Michter's distillery in Schaefferstown, Pennsylvania, which Tom's Foolery sold to the new Michter's in Louisville in 2015. The house also makes applejack from whole apples.
