“Twelve-year bourbon finished in French oak of several toasts: spice-shop clove and allspice over coffee cake.”
Tasting notes
- nose
- dried persimmon and pineapple with pear eau-de-vie, then cinnamon doughnut, hazelnut praline and cocoa, and a resinous thread of thyme and incense
- palate
- spice-led; clove, allspice and cracked pepper with turmeric, then lavender, sandalwood and a wisp of sage smoke
- finish
- long; blueberry and maraschino over coffee cake, drying to pencil shavings, peppery olive oil and candle wax
Mash bill
A blend of several whiskeys, so no single grain split.

Why it's craft
Barrell took 12-year-old straight bourbons from Kentucky, Indiana, Tennessee and Wyoming and gave them a second maturation in French oak casks toasted to different levels, the wood winemakers prize for the spice it lends. Barrell Craft Spirits, founded in Louisville in 2013 by Joe Beatrice, distills none of its whiskey; it selects barrels from other distilleries, blends them in-house, and bottles at full cask strength without chill filtration.
