Why it's craft
This edition marries straight bourbons from three states, the oldest 15 years, with a finish in casks that held Pedro Ximénez, the dark, sweet dessert sherry of Spain. Barrell Craft Spirits sources every barrel from other distilleries rather than distilling, an approach Joe Beatrice modeled on Scotland's independent bottlers when he founded the company in Louisville in 2013. Like all of its releases, it is bottled at cask strength and not chill filtered.
