“Bourbon finished in casks that held peated single malt and then rum: grilled peach and banana under a veil of smoke.”
Tasting notes
- nose
- peat smoke over the fruit, with charred banana, grilled peach and toasted marshmallow, singed sage, apricot, candied cherry and coconut macaroon
- palate
- waxy and chalky, with grippy tannin; dark chocolate, espresso and malty porter, a tarry streak of smoke, then candied lemon peel, nectarine and plum sauce
- finish
- long and savory; smoked brisket, browned butter and lemon oil, leaving burnt caramel, blackberry and cracked peppercorn

Why it's craft
The finishing casks carry two earlier lives: Barrell first filled ex-Islay single malt casks with Jamaican rum for its 2018 Tale of Two Islands rum, then refilled the emptied casks with straight bourbon from Indiana and Maryland. Barrell Craft Spirits is an independent Louisville blender founded in 2013; it distills none of its own whiskey, sourcing barrels from established producers and bottling every release at cask strength without chill filtration.
