“Five-malt Seattle single malt rested in a cask a local brewery had just used for its barleywine, carrying the beer's dried fruit and cocoa into the whiskey.”
Tasting notes
- nose
- orange zest and orange sorbet over sweet malt, with cocoa nib, sandalwood, a hint of stone fruit and light cinnamon
- palate
- sugared cereal flakes and orange candy lead into tobacco, black walnut and sandalwood, with cinnamon and ripe blackberry building underneath
- finish
- lightens as it goes; malt-steeped tea, golden raisin and cocoa give way to raspberry jam and strawberry-peach candy, ending on sandalwood and a floral hop note
Mash bill
- Malted barley100%
100% malted barley: 75% pale malt and 25% split among four caramelized malts. This is Copperworks' Five Malt recipe, built the way a brewer builds a beer grist, with the specialty malts adding toffee, dried fruit and cocoa depth to the clean pale-malt base.
- Cask
- Ex-barleywine cask, formerly a Copperworks whiskey cask
- Finish
- 10 months in a cask that held Urban Family Brewing's Treehouse in the City barleywine
- Best served
- in a West End or Pine Street cocktail
Why it's craft
Copperworks is an independent Seattle distillery founded in 2013 by two craft brewers, and it starts every whiskey as its own brewed, unhopped barley wash distilled on copper stills commissioned from Scotland. This single cask is a swap with Urban Family Brewing, also in Seattle: Copperworks lent the brewery a whiskey cask for its barleywine, then took it back to finish its own five-malt whiskey.
