“A single-season bonded bourbon, cherry and spice over Minnesota oak.”
Tasting notes
- nose
- Vanilla, black cherry and butterscotch, with mocha, cedar shavings and a berry-tinged rooibos note
- palate
- Sweet at first with caramel cake and chocolate cookie, then baking spice and mint, turning crisp like cold apple
- finish
- Warming and spice-led; white chocolate and mint linger before drying to oak and a trace of cigar ash
Mash bill
- Corn70%
- Rye20%
- Malted barley10%
70% corn, 20% rye, 10% malted barley. It is the same three-grain recipe as FEW's standard bourbon, with enough rye that the distillery describes its bourbon as taking on the spice of a rye. FEW buys its corn mainly from Indiana and its malted barley from Wisconsin, and under bonded rules every drop in the bottle comes from a single distilling season.

Why it's craft
This was FEW's first bottled-in-bond release, made for the distillery's tenth anniversary in 2021, and under the 1897 Act it must come from one distilling season at one distillery and rest at least four years in a bonded warehouse. FEW mashes, ferments and distills all of it at its alley distillery in Evanston and ages it in barrels coopered from Minnesota oak. Heaven Hill has owned FEW since 2022.
