FEW launched in Evanston, Illinois in 2011, named for temperance activist Frances Elizabeth Willard in a dry-town irony play. The house is known for small-format oak and unconventional fermentation — including saison yeast on the bourbon — and is now under Heaven Hill ownership while keeping the Midwestern craft brand.
