High-rye Midwestern bourbon mash: 70% corn, 20% rye, 10% malted barley. The rye cut is intentional — enough spice to stand up to FEW's signature Belgian saison yeast fermentation, which adds peppery, farmhouse, and lightly funky esters you will not get from standard distiller's yeast alone. Local grain story plus unconventional yeast is the mash pitch.
