“Hillrock's first bourbon made wholly from its own estate spirit, moved between two new barrels of rising char.”
Tasting notes
- nose
- dense seasoned oak with peppery tannin, raisin and dark fruit over a grainy core
- palate
- dark cherry and raisin, heavy oak with a light char and a twist of orange peel
- finish
- moderate spice and light black pepper with seasoned oak, then toasted marshmallow and graham cracker as it fades
Mash bill
- Corn51%
- Rye49%
51% corn, 49% rye. That is barely more corn than the legal minimum for bourbon, so nearly half the mash is rye, and the grain is grown on the Hillrock estate in the Hudson Valley. It is the first Hillrock bourbon made entirely from the distillery's own spirit.
- Cask
- New American oak, #3 char then #4 char
Why it's craft
Unlike the solera bourbon that made Hillrock's name, which blends in older whiskey bought years ago to start the solera, this bottle is Hillrock distillate alone, and it is the first bourbon the distillery has aged outside that system. The estate grows its grain, distills on a copper pot still and ages on site in Ancram, around a Georgian house built in 1806. Jeffrey Baker founded the distillery in 2011 with Cathy Franklin and master distiller Dave Pickerell.
