Jeffrey Baker founded Hillrock Estate Distillery on a Georgian estate in Ancram, New York, with founding master distiller Dave Pickerell. They set out to revive the pre-Prohibition Hudson Valley farm distillery: grain grown on the property, floor-malted on site, distilled on a 250-gallon copper pot still and aged in small oak. Hillrock Solera Aged Bourbon brought fractional solera blending and Oloroso sherry finishing to American bourbon. Pickerell died in November 2018. Baker still owns the distillery.
