- finish

Why it's craft
The rye in this bottle grows on Hillrock's own fields in Ancram and is milled, distilled, aged and hand-bottled on the estate. The whiskey spends time in one new charred barrel and then a second, more heavily charred one. Hillrock was founded in 2011 by Jeffrey Baker with Cathy Franklin and master distiller Dave Pickerell, on an estate built around an 1806 Georgian house.
