“A single malt that passes through three of the distillery's own casks: bourbon, then rum, then wine.”
Tasting notes
- nose
- Honey and ripe fruit, with vanilla and baking spice underneath
- palate
- Creamy and buttery; caramel and banana, then molasses and burnt sugar
- finish
- Dried fruit and cocoa take over as the burnt-sugar sweetness recedes
Mash bill
- Malted barley100%
100% malted barley. The barley is two-row malt, organic and bought locally, and it is the only grain in the mash. Most of Journeyman's whiskeys are built on corn, wheat and rye; this one was made as a nod to Scotch single malt.
- Cask
- Used Featherbone Bourbon barrels, then used Road's End Rum barrels
- Finish
- 10 months in used Road's End Rum barrels, then 2 months in wine barrels
Why it's craft
Journeyman ages this malt through a chain of casks from its own production: barrels that first held its Featherbone Bourbon, then barrels that held its Road's End Rum, before a short wine-barrel finish. Founder Bill Welter came to distilling after time in Scotland, and Three Oaks Single Malt is the distillery's answer to the Scotch tradition, made from organic two-row barley and distilled in the town it is named for.
