- Peated malted barley25%
75% corn, 25% peated malted barley. The corn is organic, grown in New York's Finger Lakes by Lakeview Organic; the barley is Chariot malt from Thomas Fawcett, grown and kilned in Scotland over peat from the Aberdeen area to about 15 parts per million of phenols. The peated malt brings the smoke, while the corn and new charred oak bring the caramel and baking spice of the bourbon underneath.

Why it's craft
Kings County, founded in 2010 by Colin Spoelman and David Haskell, is New York City's oldest whiskey distillery and has never sold whiskey made anywhere else: it mashes, ferments, distills and ages everything at the Brooklyn Navy Yard on copper pot stills. This bourbon borrows from Scotch, with Scottish peated malt making up a quarter of a mash built on New York organic corn. The distillery remains independent and sold its one-millionth bottle in 2026.
