Tasting notes
- nose
- pralines coated in milk chocolate, with fig jam and old oak
- palate
- butterscotch and dried citrus with sweet herbs, then peanut brittle and a dusting of cocoa
- finish
- fresh mint and Luxardo cherry over maple-cinnamon cookie, settling into soft, drying oak
Mash bill
- Corn70%
- Wheat15%
- Malted barley15%
70% corn, 15% wheat, 15% malted barley. The grain is local and non-GMO, and the corn is grown on the farm of chief distiller Lee Kennedy. There is no rye in this recipe: wheat is the second grain. The barley malt is toasted, a choice the distillery makes for a deeper, more complex spirit.
- Cask
- New charred American oak, #4 char
Why it's craft
This is Leiper's Fork's wheated bourbon, made with toasted barley malt and bottled in bond at 100 proof. The family-owned distillery mashes, ferments, distills, ages and bottles every drop itself on a farm property outside the village of Leiper's Fork, running a single 500-gallon copper pot still and making about 25,000 gallons a year. It distills to a low 137 proof, fills its barrels at 110 proof and does not chill filter.
