- nose
- vanilla bean and molasses, with dark honey, licorice, dried apricot and dates over clove

Mash bill
- Rye55%
- Corn30%
- Toasted barley malt15%
55% rye, 30% corn, 15% toasted barley malt. The grain is local and non-GMO, and the corn comes from chief distiller Lee Kennedy's farm. At 55% the rye sits just above the 51% legal minimum for rye whiskey, with corn making up most of the rest. As in all of the house recipes, the barley malt is toasted.
- Cask
- New charred American oak, #4 char
Why it's craft
Leiper's Fork sells this seven-year rye only at the distillery, and only at certain times of the year. It is pot distilled from local grain on a 500-gallon copper still, barreled at 110 proof and bottled in bond without chill filtering. The founding Locke-Kennedy family has lived in the village of Leiper's Fork since 1805, and the distillery they opened in 2016 still mashes, ferments, distills, ages and bottles everything it sells.
