“A young single-barrel whiskey filled at low entry proof, so the cool-fermented grain and fruit lead and the oak stays in the background.”
Tasting notes
- nose
- cornmeal and graham cracker with pear and raspberry, then a herbal edge of tarragon, dill and licorice
- palate
- dry and nutty, with soft corn and rye grain, toasted cereal and a light vanilla note
- finish
- grilled corn and chili spice, fading to roasted pecan and toasted grain
Mash bill
- Corn65%
- Malted barley20%
- Rye15%
65% corn, 20% malted barley, 15% rye. The barley is floor-malted Colorado grain, and the mash is soured and then fermented at cool temperatures without refrigeration; the slower ferment is what the distillery credits for the soft pear and raspberry notes in the spirit. It is distilled on the grain, with the solids left in the pot still, to draw out a fuller, rounder spirit.
- Cask
- New American white oak

Why it's craft
Leopold Bros, a family distillery founded in 1999, mashes, ferments, pot-distills and ages this whiskey at its own Denver distillery. The barrels are filled at 98 proof, the pre-Prohibition standard, so the new oak adds vanilla and a little wood without overpowering the grain. Each bottle comes from a single barrel, and the label states the season the barrel was filled.
