Tasting notes
- nose
- stone fruit, dark cherry and creamy vanilla, with rye spice, leather and a savory edge
- palate
- cherry, cinnamon and rich caramel over seasoned oak, with dry pipe tobacco and dark chocolate behind the rye spice
- finish
- medium to long; dark fruit, caramel and graham cracker linger with the rye spice, drying to pipe tobacco and dark chocolate
Mash bill
- Corn52%
- Rye44%
- Malted barley4%
52% corn, 44% rye, 4% malted barley. Nearly as much rye as corn goes into the mash, which puts this among the high-rye bourbons. Old Dominick says the recipe recalls the high-rye mash bills Domenico Canale offered when he was selling whiskey in Memphis.
- Cask
- New charred oak, No. 4 char
Why it's craft
Huling Station is a bourbon Old Dominick designs but does not distill: it is made to the family's high-rye recipe under contract at MGP in Lawrenceburg, Indiana, and aged in heavy No. 4 char barrels. Old Dominick itself is a family-owned distillery in downtown Memphis, run by Chris and Alex Canale, great-great-grandsons of Domenico Canale, whose D. Canale & Co. sold Old Dominick whiskey from 1866. The distillery presents this bottle as a tribute to the whiskeys of that era in Memphis.
