“The three-mash bourbon matured again with seasoned French oak: butterscotch, custard and baked pear.”
Tasting notes
- nose
- Butterscotch and toffee with toasted marshmallow, vanilla bean, dried cherry and a hint of dark chocolate
- palate
- Butterscotch and vanilla custard with brown sugar, baking spice, roasted nuts and a touch of leather
- finish
- Warm and lingering; cinnamon-spiced baked pear, toasted oak and molasses, with a peppery fade
Mash bill
A blend of several whiskeys, so no single grain split.
78% corn, 10% rye and 12% malted barley from Bardstown Bourbon Co.; 80% corn, 10% rye and 10% malted barley from a Tennessee distillery; and 70% corn, 20% wheat and 10% malted barley from Finger Lakes Distilling. That is two low-rye bourbons and one wheated one, so the blend carries rye spice and a softer wheat sweetness together. Pursuit prints all three recipes on the label.

Why it's craft
The extra maturation here uses custom Double Oak barrels, fitted with French oak staves that were seasoned for 36 months and medium toasted, and it adds the butterscotch the whiskey is known for. Pursuit Spirits is a Louisville house founded by the hosts of the Bourbon Pursuit podcast; it blends bourbons from partner distilleries in Kentucky, Tennessee and New York and does not distill its own. The three mash bills are on the label, and the whiskey is sourced.
