“The three-mash rye matured again in charred French oak: cherry pie, berry jam and rye spice.”

Tasting notes

nose
Cherry pie and cherry cobbler with cranberry, cardamom, nutmeg, maple sugar candy and sweet oak
palate
Buttered brown sugar and tart cherry with berry jam, orange rind and cinnamon stick
finish
Cherry pipe tobacco and charred oak, washed in rye spice, with lasting warmth

Mash bill

A blend of several whiskeys, so no single grain split.

95% rye and 5% malted barley from Bardstown Bourbon Co.; 95% rye and 5% malted barley from Sagamore Spirit; and 52% rye, 43% corn and 5% malted barley from Sagamore Spirit. Two are near-all-rye recipes and one adds a large share of corn, which sweetens the blend. Pursuit prints all three recipes on the label.

Cask
New French oak, light toast, heavy char (second maturation)
Finish
Second maturation in new French oak

Why it's craft

The second maturation here is in new French oak, toasted lightly and charred heavily, and it leaves the rye's brightness intact while adding cherry and berry fruit. Pursuit Spirits was founded by the hosts of the Bourbon Pursuit podcast and does not run stills; it blends rye whiskeys from partner distilleries in two states and prints the three recipes on the label. The whiskey is sourced, and the bottle says so.
