“Three bourbons from three states, finished in barrels picked by veterans”
Tasting notes
- nose
- caramel, vanilla and butterscotch over toasted oak, ripe cherry and baking spice
- palate
- brown sugar, vanilla custard, dark fruit, toffee and cinnamon, with toasted oak underneath
- finish
- long and warming, with cinnamon-spiced fruit, vanilla, caramel and seasoned oak, and the sweetness lingers
Mash bill
A blend of several whiskeys, so no single grain split.
78% corn, 10% rye, 12% malted barley; 80% corn, 10% rye, 10% malted barley; 70% corn, 20% wheat, 10% malted barley. The label names three mash bills, one from Kentucky, one from Tennessee and one from New York. Two are low-rye recipes and the third is wheated, so the blend carries rye spice and a softer wheat sweetness together.
- Cask
- New charred oak with seasoned French oak staves
- Finish
- Second maturation in Double Oak barrels
Why it's craft
Pursuit Spirits is a Louisville house founded by the hosts of the Bourbon Pursuit podcast, and it does not run stills of its own. It blends straight bourbons from distilleries in Kentucky, Tennessee and New York, and it lists all three mash bills on the label. This release puts the blend through a second maturation in Double Oak barrels, and veterans chose the barrels. Pursuit sources its whiskey, and says so on the bottle.
