Tasting notes
- nose
- cherry and dried fruit with marmalade and raspberry, then candied lemon peel, dried flowers, herbs and licorice
- palate
- raisin, currant and blueberry over caramel and vanilla, with almond, coriander seed and a slightly bitter, mineral edge
- finish
- medium length and drying; cherry, red grape and dark fruit with licorice, menthol and roasted nuts, as spice and wet oak build
Mash bill
- Corn68%
- Wheat18%
- Malted barley14%
68% corn, 18% wheat, 14% malted barley. Wheat stands in for rye as the flavoring grain, which keeps the spice low and leaves room for the sherry cask's fruit. Rabbit Hole gives each of its bourbons its own recipe: Cavehill is a four-grain bourbon and Heigold a high-rye one.
- Cask
- Toasted and alligator-charred new American oak
- Finish
- Pedro Ximénez sherry casks
- Best served
- neat, with a little water, or in a cocktail
Why it's craft
Rabbit Hole founder Kaveh Zamanian named Dareringer for his wife, a Louisville native who drew him from Scotch to bourbon. The barrels are toasted over a wood fire for up to 20 minutes before charring, and the wheated bourbon then rests in hand-made Pedro Ximénez casks from Spain's Casknolia cooperage. Pernod Ricard has held a majority stake in Rabbit Hole since 2019.
