Why it's craft
Velardé is a red winter wheat bourbon finished for four months in Oloroso sherry casks, the kind Spanish bodegas use in their solera systems. It belongs to Rabbit Hole's Distillery Series: small, cask-strength 375 ml releases of four-to-six-year-old barrels given experimental finishes and sold through the Louisville distillery. Rabbit Hole distills on copper Vendome column stills at the distillery it opened in 2018, and Pernod Ricard has held a majority stake since 2019.
