“A bourbon with as much rye as the law allows, a tenth of the mash bill malted rye.”
Tasting notes
- nose
- Ripe fruit and maple syrup, edged with black pepper, baking spice and grain
- palate
- Candied fruit and sweet cherry with caramel, vanilla and a cool streak of mint
- finish
- Long; a quick flash of peppercorn and cinnamon settles into cherry, licorice and honey, with saddle leather lingering at the end
Mash bill
- Corn51%
- Rye39%
- Malted rye10%
51% corn, 39% rye, 10% malted rye. Corn sits at 51%, the least a bourbon can contain, so the rest of the grain bill goes to rye, a tenth of it malted. The distillery chose the recipe as a tribute to its own rye tradition and to rye's popularity in the years before Prohibition.
- Cask
- New charred oak
Why it's craft
Ross & Squibb distills, ages and bottles this bourbon in Lawrenceburg, Indiana, on the site where George Ross opened the Rossville Distillery in 1847. Its recipe is one of the newer mash bills the distillery has added beyond the 60% corn, 36% rye high-rye bourbon it has long supplied to brands such as Smoke Wagon and Smooth Ambler. It joined the Remus range in 2023 as a permanent, year-round bottling aged six years.
