Tasting notes
- nose
- Caramel and vanilla with fresh grain and leather, sharpened by black pepper and a touch of bread dough, plus sour apple and darker fruit like dried fig and plum over walnut and brown sugar
- palate
- Sweet first, caramel and vanilla, then subtle rye spice, cedar and rye bread, with dried cherry, toffee and a streak of dark chocolate on a drying, medium body
- finish
- Leather and dry oak hold on briefly while the sweetness drops away, leaving the palate dry as it fades quietly
Mash bill
- Corn60%
- Rye36%
- Malted barley4%
60% corn, 36% rye, 4% malted barley. A rye share above a third makes this a high-rye bourbon, pushing black pepper and baking spice up against the corn's caramel and vanilla.

Why it's craft
This is the everyday high-rye straight bourbon of the Southern Star line, released in numbered batches. Southern Distilling, privately owned and founded by Pete and Vienna Barger, runs a 20-acre distilling and aging campus in Statesville and buys grain from farms within about 20 miles. It also distills and ages whiskey under contract for other brands.
