“A white whiskey from bourbon mash, made clean and fruity like a European eau-de-vie from a cool brandy-yeast ferment and tight pot-still cuts.”
Tasting notes
- nose
- fresh and floral, with soft oat porridge up front and a gentle sweetness leaning toward vanilla
- palate
- oatmeal, butterscotch and vanilla on a thick, creamy body, then an earthy grain note, a light cinnamon prickle on the tongue, and dark chocolate with a touch of peach toward the back
- finish
- long and silky, holding butterscotch, vanilla and cinnamon in a snickerdoodle-cookie sweetness that stays buttery, with only faint warmth as it fades
Mash bill
Full grain split not published.
Indiana-grown corn with other grains; the full recipe and its split are not published. The mash is fermented with wine and brandy yeasts at cool temperatures, which brings forward the sweeter, fruitier side of the raw grain.

- Neutral oak barrel (ten-minute rest)
Why it's craft
This white whiskey is fermented cool with wine and brandy yeasts and double distilled on pot stills with close cuts, aiming for the clean fruit of a European eau-de-vie. It spends only ten minutes in a neutral oak barrel before it goes into the bottle. The Doty family opened Spirits of French Lick in 2016 alongside its winery and runs what it calls Indiana's largest pot-still distillery.
