Spirits of French Lick was established in 2016 by John and Kimberly Doty as an outgrowth of their French Lick Winery in West Baden Springs, Indiana, when the family farm began growing wheat and an heirloom corn for the new distillery. The Dotys recruited Alan Bishop as head distiller in late 2015, and distilling began in April 2016. It is the largest pot-still distillery in Indiana and double pot distills its whiskeys, entering them into barrel at low proof and using toasted, lightly charred barrels. It grows Amanda Palmer heirloom corn on its Hoosier Homestead-designated family farm and works with grains rarely used in bourbon, including oats, kasha and buckwheat, and it also makes brandy, gin, aquavit and absinthe. Bishop left in April 2024, and assistant distiller Justin Whaley was promoted to head distiller. The business remains owned by the Doty family, with Nicholas, Laurelin and Aaron Doty listed as owners.
