Why it's craft
William Dalton swaps rye for wheat, adds a two-row caramel malt, and is distilled twice in pot stills before entering the barrel at 105 proof. The Doty family, who run French Lick Winery, opened the distillery beside it in 2016, and the farm grows wheat and corn for the stills. Everything is mashed, fermented, aged and bottled on site, and the bonded label guarantees at least four years in wood.
