“Estate rye finished in a second oak barrel: pear, chewy caramel and apricot.”
Tasting notes
- nose
- Pear, rye spice, clove, seasoned oak and a hint of leather
- palate
- Rye spice and chewy caramel with leather and apricot, thick in body, with a light grain note
- finish
- White grape and a hint of oak as the rye spice builds; long
Mash bill
A blend of several whiskeys, so no single grain split.
Rye and malted barley, blended from two recipes in a proportion that is not published. One recipe is 80% rye and 20% malted barley, the other 90% rye and 10% malted barley, and neither uses corn, so the rye grain sets the flavor. The Huber family grows the rye on its own farm and buys the malted barley locally. Both are sweet mashes, fermented seven days in closed-top stainless steel.
- Cask
- New heavily toasted, lightly charred oak (finishing)
- Finish
- Second maturation in a new toasted oak barrel
Why it's craft
After aging in the Old Rickhouse, this rye moves into a new barrel that the distillery had made to its own specification, heavily toasted and lightly charred. The rye is grown on the Huber family farm, fermented as a sweet mash and distilled on copper pot stills. It is a limited expression. The family has farmed in Starlight, Indiana, since 1843.
