Starlight Distillery is part of the Huber family farm in Starlight, Indiana, which German immigrant Simon Huber established in 1843 and seven generations have worked since. Greg and Ted Huber founded the distillery in 2001 on an 80-gallon Christian Carl pot still, and the first Huber brandy reached shelves in November 2004. Whiskey followed in 2013, after a change in state law, along with a 13,000-square-foot stillhouse. The family grows non-GMO corn, rye and wheat on the estate, buys its malted barley locally, and is one of the few American whiskey producers to ferment with a sweet mash rather than a sour mash, distilling in copper pot stills and aging barrels in rickhouses on the Knobstone Escarpment about 20 miles north of Louisville. Ted Huber and his sons Christian and Blake each distill with their own mash bills and methods, and the team blends the results into one house style.
